An Interview with Matt Gillan of Heritage
I was lucky enough to catch up with Michelin Star Chef, Matt Gillan (Great British Menu, BBC) on his newest and most exciting venture, Heritage, his new restaurant and guest rooms based in Slaugham.

Sum up the Heritage experience in 5 words…
Personable, Fun, Relaxed, Intriguing and Educational
Heritage means special possession or identity. What values or traditions are you putting in place now that you still want to see in the restaurant in 10 years’ time?
Heritage has been built around people. We put a huge amount of focus on the team and guest experience. I’d like to think that in 10 years’ time, hospitality will still be the focus over the actual product in restaurants. We are constantly challenging what it looks and feels like, to work in hospitality. Ripping up the old rule book and making it a place that people want to work in and rewarding those people appropriately. I hope that continues to evolve, over the next decade.
What food will never be on your menu?
I’m open to using all ingredients but as a dish, you will never see a crème caramel on the menu!
Time to really impress us, can you name drop the biggest celeb you have cooked for…
I’ve been fortunate to cook for quite a few celebs, over the years but the most famous has to be Adele.
If you were a type of cheese, which cheese would you be?
Ha!! I’d be a small goat’s cheese (specifically Golden cross). Possibly not to everyone’s taste but it gets better as it gets older

I’ve eaten a scorpion in Thailand before, but what’s the weirdest thing you’ve ever eaten?
Crickets are probably the weirdest thing I’ve eaten although the most memorable ‘weird food experience’ was eating beef heart. Whilst not extreme, it hadn’t been cooked properly, so I
was chewing on semi raw beef heart like a bush tucker trial.
What’s next, MasterChef maybe or do you fancy hosting your own show?
I think my opportunity to appear on MasterChef has passed unless I take over from Marcus! I do have an idea for my own show, but I’ll keep it under wraps, for the moment.
